Recipe: Greek Salad with Grilled Chicken

Greek Salad with Grilled Chicken


Servings: 4


Ingredients:

- 2 boneless, skinless chicken breasts

- 2 tablespoons olive oil

- 1 teaspoon dried oregano

- Salt and black pepper, to taste

- 1 head of romaine lettuce, chopped

- 1 English cucumber, diced

- 2 tomatoes, diced

- 1 red onion, thinly sliced

- 1/2 cup Kalamata olives, pitted

- 1/2 cup crumbled feta cheese

- 1/4 cup fresh lemon juice

- 2 tablespoons red wine vinegar

- 1 garlic clove, minced

- 2 tablespoons chopped fresh parsley


Instructions:


1. Preheat the grill to medium-high heat.


2. In a small bowl, combine the olive oil, dried oregano, salt, and black pepper. Brush the chicken breasts with the seasoned olive oil mixture.


3. Place the chicken breasts on the preheated grill and cook for about 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C).  Get the chicken out of the grill, and let it rest for a while. Slice the chicken into thin strips.


4. In a large salad bowl, combine the chopped romaine lettuce, diced cucumber, tomatoes, red onion, Kalamata olives, and crumbled feta cheese.


5. In a small bowl, whisk together the fresh lemon juice, red wine vinegar, minced garlic, salt, and black pepper.  To coat all ingredients evenly, place the dressing on top of the salad and toss gently. 


6. Divide the salad among four plates and top each plate with sliced grilled chicken.


7. Sprinkle the chopped fresh parsley over the salads for garnish.
